I split a whole chicken in half so I could season it thoroughly...



I baked the chicken in a bag so it could be super tender and moist...when the chicken was done I cut it into separate pieces, added onions, bell peppers and whole mushrooms. I served with brown rice and sauteed spinach.

I am blogging this dish for a certain someone who shall remain nameless. I'm a foodie as you can tell by my thighs (LOL) I love finding new, quick and healthy recipes. I'm on the go pretty much all day so I usually start cooking dinner sometime after 5pm. I don't have alot of time and energy to whip up some fancy feast but just because I'm pressed for time doesn't mean we can't have a flavorful, balanced dinner. I have pretty much every type of seasoning there is...The Farmers Market in Dallas is where I stock up. They are sold in resealable baggies which keeps them fresh and dry. I was giving my buddy a hard time for not cooking for her new hubby and since she gave me 109 excuses this blog post is for you homie!! *giggling*

No fuss low carb dinner!

This little packet is a life saver!!




McCormick® Bag 'n Season® Chicken is the easy way to make chicken that is tender, savory and juicy. Bag 'n Season® Chicken contains a blend of herbs and spices, as well as a cooking bag to eliminate messy cleanup. With Bag 'n Season®, preparation and cleanup are a snap!


USAGE


Prep Time: 15 minutesCook Time: 1 hourStand Time: 5 minutes


You Will Need


1 package McCormick® Bag 'n Season®

Chicken2 1/2 pounds chicken parts

4 cups cut-up fresh vegetables, such as potatoes, green beans, onions and carrots*

PREHEAT oven to 350°F.

Arrange opened Cooking Bag in 13x9-inch baking pan or dish.

Sprinkle Seasoning Mix evenly over chicken.
PLACE chicken in single layer in Bag.

Add vegetables.* Sprinkle any remaining seasoning over chicken and vegetables.

Close Bag loosely with nylon tie.

Cut 4 small holes in top of Bag to allow steam to escape.
BAKE in lower half of oven 1 hour.

* Remove from oven. Let stand 5 minutes.

Cut open Bag.

Serve chicken and vegetables with pan juices. If desired, serve with McCormick Chicken Gravy.
*Vegetables can be omitted.

Bake chicken 45 minutes.
Makes 8 Servings


IMPORTANT: Allow 8 inches for Bag to expand while cooking. Cooking Bag should not touch oven walls or racks.

For Boneless Skinless Chicken Breasts: With Vegetables: Use 2 lbs. boneless skinless chicken breasts halves AND 4 cups sliced fresh vegetables. Place vegetables in Bag FIRST; then add seasoned chicken breasts on top of vegetables. Bake 45 minutes. Without Vegetables: Bake for 30 minutes.







Steamed brocolli and cauliflower.. I served it with Uncle Ben's Brown Rice and drizzled the drippings over the riice.

Chicken Breast 5 ways::::

Grilled Chicken with Brie and Baby Spinach Salad

Ingredients
Cooking spray
4 boneless skinless chicken breast halves, about 5 ounces each
Salt and freshly ground black pepper
Salt-free garlic and herb seasoning
4 to 8 slices Brie cheese, about 1/2-inch thick
1 tablespoon olive oil
2 shallots, chopped
2 tablespoons vinegar
2 tablespoons honey
4 cups fresh baby spinach leaves
4 slices bacon, cooked
Directions
Heat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat.
Season both sides of chicken with salt, black pepper, and garlic and herb seasoning. Add chicken to hot pan and cook 3 to 4 minutes per side, until browned and cooked through. Remove from heat. Place 1 to 2 slices of Brie on top of chicken, cover with foil and place back on grill pan for another 1 minute, until cheese melts.
Meanwhile, heat a small skillet over medium heat. Add olive oil and chopped shallots to the pan and saute. In a small bowl, combine the vinegar, honey and salt and pepper, to taste. Add the mixture to the skillet and stir to combine. Pour the warm vinaigrette over the spinach and toss to coat. Crumble the bacon strips over the dressed salad.
Transfer chicken to a serving plate or plate with spinach salad

Spicy Szechuan Chicken Lettuce Wraps

Ingredients
3 boneless skinless chicken breasts
1/4 cup shredded daikon radish
2 carrots, shredded
1/4 cup bean sprouts
3 stalks (1/2 cup) scallions
1/4 cup Szechuan sauce
1 tablespoon Chinese five-spice powder
1/4 teaspoon cayenne
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil, for frying
2 tablespoons butter
1 lemon, juiced
1 head Bibb lettuce leaves
Directions
Split boneless chicken in half. If too thick, pound out to make thinner.
In a medium bowl, mix together radish, carrots, bean sprouts, and scallions. Add Szechuan sauce.
In a small bowl, mix together five-spice, cayenne, salt and pepper. Season chicken breasts lightly with rub. Cut the chicken into strips.
In a large skillet over high heat, add the grapeseed oil. Once hot, sear the chicken breasts for 4 minutes on each side. Add butter and lemon to pan and baste the chicken for another minute. Remove chicken to a platter to let cool. Once cooled, dice or shred the chicken.
Place a spoonful of the vegetable mixture and the shredded chicken onto each leaf of lettuce. Roll and serve.


Ingredients
4 large boneless skinless chicken breast halves
3 tablespoons olive oil
2 tablespoons chopped fresh thyme leaves
Salt and freshly ground black pepper
3 (9-ounce) packages fresh fettuccine
2 cups mayonnaise
1/2 cup freshly chopped green onions
1/4 cup freshly chopped parsley leaves
1/4 cup freshly chopped basil leaves
1 teaspoon The Lady's House Seasoning, divided, recipe follows
1 teaspoon lemon juice
1 teaspoon seasoned salt (recommended: The Lady's Seasoned Salt)
Directions
Preheat oven to 350 degrees F.
Slice chicken breasts lengthwise into 1-inch wide strips. Place on a rimmed baking sheet and drizzle with olive oil. Sprinkle with thyme and salt and pepper. Bake 15 to 20 minutes or until cooked through but still juicy; do not overcook.
While chicken is cooking; cook pasta according to package directions. Drain pasta, rinse in cold water and drain again. Pat excess moisture off pasta with a paper towel, if necessary.
Combine mayonnaise, green onions, parsley, basil, House Seasoning, lemon juice and seasoned salt. Pour dressing over pasta and toss gently.
Place chicken strips on top of pasta.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.


Spanish Spice Rubbed Chicken Breasts with Parsley-Mint Sauce

Ingredients
Spice Rubbed Chicken:
1 tablespoon Spanish paprika
1 tablespoon smoked paprika
2 teaspoons cumin seeds, ground
2 teaspoons mustard seeds, ground
2 teaspoons fennel seeds, ground
1 teaspoon coarsely ground black pepper
2 teaspoons kosher salt
4 (8-ounce) boneless chicken breasts
Olive oil
Parsley-Mint Sauce, recipe follows
Directions
Preheat your grill to high.
Whisk together the paprika, cumin, mustard, fennel, pepper and salt in a small bowl.
Brush the chicken with a few teaspoons of oil on both sides. Rub the breasts on the skin side with some of the rub and place on the grill, rub side down. Grill until golden brown and slightly charred, 4 to 5 minutes. Turn the breasts over and continue cooking until just cooked through, 4 to 5 minutes. Transfer the chicken to a platter and immediately drizzle with some of the Parsley-Mint Sauce. Let rest 5 minutes. Serve with additional sauce on the side.
Parsley-Mint Sauce:
1 1/2 cups tightly packed fresh mint leaves
3/4 cup tightly packed fresh flat-leaf parsley
6 cloves garlic, chopped
2 serrano chiles, grilled, peeled, chopped
2 tablespoons honey
2 tablespoons Dijon mustard
1 cup olive oil
Water
Salt and freshly ground black pepper
Place the mint, parsley, garlic and serranos in a food processor and process until coarsely chopped. Add the honey and mustard and process until combined. With the motor running, slowly add the olive oil until emulsified.
Transfer the mixture to a bowl and whisk in a few tablespoons of cold water to thin to a sauce-like consistency. Season with salt and pepper to taste.





Shredded, Saucy BBQ Chicken Sammies

Ingredients
1 cup chicken stock
1 bottle Mexican beer
4 pieces, 6 ounces each boneless, skinless chicken breast
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 medium onion, peeled and finely chopped
2 tablespoons Worcestershire sauce, eyeball it
1 tablespoon hot sauce (recommended: Tabasco)
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning, by McCormick)
3 tablespoons dark brown sugar
4 tablespoons tomato paste
1 large sour deli pickle, chopped
6 to 8 slices sweet bread and butter pickles, chopped
6 soft sammy buns, such as soft burger rolls, split
Directions
Bring liquids to a simmer in a small to medium skillet and slide in the chicken breast meat. Gently poach the chicken 10 minutes, turning once about after 5 minutes.
While chicken poaches, heat a second medium skillet over medium low heat. To hot skillet, add extra-virgin olive oil and garlic and onion and gently saute until chicken is ready to come out of poaching liquids. Combine the next 5 ingredients in a medium bowl and reserve.
When the chicken has cooked through, add 2 ladles of the cooking liquid to the bowl, combining with the sauces, spices, brown sugar and tomato paste. Once the liquids and seasonings are combined, remove chicken, slice it, and transfer to the medium bowl. Using 2 forks, shred the chicken and combine with the liquids. Add the shredded chicken to the onions and garlic and combine well. Simmer together 5 to 10 minutes, using extra cooking liquids to make your chicken as saucy as you like.
Combine sour and sweet pickles in a small bowl. Split rolls and fill with scoops of shredded chicken. Top with pickle relish and serve.
